Beef Kabobs with Chimichurri

Ingredients:

  • 1/4 cup plus 2 tablespoon Cardenas Greek EVOO
  • 2 pounds boneless beef sirloin steak
  • 1 baguette  
  • 1/2 cup fresh cilantro
  • 1/2 tsp crushed red pepper
  • 2 clove garlic minced
  • 1/2 cup mint
  • 1/4 cup red wine vinegar
  • 1/2 tsp ground cumin
  • salt and pepper to taste

Directions: 

  1. Trim steak and thinly slice into 2 inch long strips.
  2. Coat with 2 tbs Cardenas Greek EVOO, salt and pepper
  3. Finely chop cilantro, garlic and mint and toss in a bowl with red wine vinegar
  4. Add red pepper, cumin and salt and pepper.
  5. Stir in 1/4 cup Cardenas Greek EVOO 
  6. Cut baguette into 1/2” slices.
  7. Fold steak strips and thread onto bamboo skewers 
  8. Grill bread 3 minutes, turning in 1 1/2 minutes.
  9. Grill steak 4 minutes, turning after 2 minutes.
  10. Transfer skewers onto bread slices and top with the chimichurri sauce.
