Ingredients:
- 1/4 cup plus 2 tablespoon Cardenas Greek EVOO
- 2 pounds boneless beef sirloin steak
- 1 baguette
- 1/2 cup fresh cilantro
- 1/2 tsp crushed red pepper
- 2 clove garlic minced
- 1/2 cup mint
- 1/4 cup red wine vinegar
- 1/2 tsp ground cumin
- salt and pepper to taste
Directions:
- Trim steak and thinly slice into 2 inch long strips.
- Coat with 2 tbs Cardenas Greek EVOO, salt and pepper
- Finely chop cilantro, garlic and mint and toss in a bowl with red wine vinegar
- Add red pepper, cumin and salt and pepper.
- Stir in 1/4 cup Cardenas Greek EVOO
- Cut baguette into 1/2” slices.
- Fold steak strips and thread onto bamboo skewers
- Grill bread 3 minutes, turning in 1 1/2 minutes.
- Grill steak 4 minutes, turning after 2 minutes.
- Transfer skewers onto bread slices and top with the chimichurri sauce.
