Grilled Haddock with Fresh Mango Salsa

Grilled Haddock with Fresh Mango Salsa 

Makes 2 servings

Ingredients:

- 1 lbs fresh haddock

- 1 lemon

- 1 mango

- 8 cherry tomatoes 

- 1 small English cucumber - slice red onion diced

- 2 tbsp chopped cilantro

- 2 cups spinach

- 2 tbsp Cardenas Garlic Chili Oil

- 2 tbsp Cardenas 25 Star White Balsamic (or Mango Balsamic)

Salt and pepper

Instructions:

1. Heat griddle or grill pan to 350 degrees. 
2. Dice produce and place in a small bowl, add chopped cilantro, balsamic, garlic chili oil, and a pinch of salt. Mix.

3. Season fish with salt, pepper and fresh lemon juice.

4. Cook fish on griddle. 2-3 minutes on each side. 
5. Spread fresh spinach on two plates. Top with grilled fish and mango salsa. Salt and pepper to taste.
