Ingredients:
- 3 tablespoon Cardenas Greek EVOO
- 1 medium zucchini
- 1 medium yellow squash
- 1/2 medium red onion
- 8 oz small mushrooms
- 8 oz cherry tomatoes
- 1 tablespoon Cardenas Citrus Twist Blend (or your favorite herbs)
Directions:
- Pre-heat grill to medium heat.
- Removed ends from zucchini and squash. Slice lengthwise, then cut into 1/2” pieces. Wash and halve mushrooms. Wash cherry tomatoes and leave whole.
- Peel onion and cut into long slices.
- In a medium bowl, add vegetables , drizle with the Cardenas Greek EVOO, and sprinkle the citrus twist herbs. Toss until evenly coated. Transfer to grill basket or foil for outdoor grilling.
- Grill for 8-10 minutes or until tender (If you don’t have a grill veggies can be baked or sauted).
