Ingredients:
- 1 bunch kale
- 1/2 Lemon
- 2tbs CARDENAS Olive Oil
- 1 cup quinoa, cooked and salted
- 1 finely chopped apple
- 1/4 cup Gorgonzola or Bleu Cheese
- 1/4 cup Pine nuts
- 1/2 cup Pomegranate seeds
- 2tbs white balsamic (25 Star or your favorite variety)
Instructions:
- Wash, de-vein, and finely chop the kale. In a medium bowl toss with 2tbs olive oil and the juice from 1/2 a lemon. Set aside for 1-2 hours.
- Cook 1 cup of quinoa and set aside to cool.
- After 1-2 hours, prepare salad by tossing all of the ingredients together in a bowl. Serve immediately.
