Winter Kale Salad with Pomegranate and Blue Cheese


  • 1 bunch kale
  • 1/2 Lemon
  • 2tbs CARDENAS Olive Oil
  • 1 cup quinoa, cooked and salted
  • 1 finely chopped apple
  • 1/4 cup Gorgonzola or Bleu Cheese
  • 1/4 cup Pine nuts
  • 1/2 cup Pomegranate seeds 
  • 2tbs white balsamic (25 Star or your favorite variety)


  1. Wash, de-vein, and finely chop the kale. In a medium bowl toss with 2tbs olive oil and the juice from 1/2 a lemon. Set aside for 1-2 hours. 
  2. Cook 1 cup of quinoa and set aside to cool.
  3. After 1-2 hours, prepare salad by tossing all of the ingredients together in a bowl. Serve immediately.
